SAUVIGNON
The name Sauvignon comes from “sauvage” + “vignon”, corresponding to the Italian “wild” + “vineyard”. It seems that this term was coined because the plant of the Sauvignon vine, and especially the shape of its leaves, recalls that of wild vines. To confirm, in the first written testimonies of Sauvignon, about the sixteenth century, it is also mentioned with the term “fiers”, from the Latin “ferus”, or “wild”.

VINIFICATION
We manage the harvest in three phases: prenature, at maturity and overripe. We make a nighttime harvesting in the absence of light and at low temperature. Once brought the grapes to the celiar, we process them in over-ripening. When alcoholic fermentation is complete, we vinify the wines separately and blend them at the end of April.
ORGANOLEPTIC ASPECTS
Typology to which special care is devoted right from the countryside, then a very refined, hyper-reduction processing, with plus of night harvesting, capable of extracting from the raw materiai all it needs in terms of various such. Cedar, wild rosemary, snuff peach and white pepper on the nose. The palate is brackish-citrusy with officinaI recaiI and long persistence.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish starters, especially shellfish. Risotto with asparagus.
