MERLOT

The vine and the wine “Merlot” are so called in reference to the “blackbird”. In the specific, the dark color of the feathers of the blackbird is associated to that, equally dark, of the grapes of the vine and to the colouration of the nectar obtained. According to some scholars, rather than to the color of the bird, the reference is to the predilection shown by the blackbird for these grapes and to its tendency to attach and eat them before the others.

Description

VINIFICATION

We manually harvest the grapes which, once crushed and destemmed, we piace in steel tanks. Here the must macerates and ferments on the skins for about 20 days, while carrying out malolactic fermentation. Racking involves aging part of the wine in French oak barrels. We bottle the wine usually in mid-December, and then give it an additional 2 to 3 months of bottle aging.

ORGANOLEPTIC ASPECTS

Ruby color, dense and compact with violet reflections, bright. The nose is very clean, with hints of cassis and laurei notes. Great density on the palate, with compact tannins but well blended with the fresh-saline component. Finish with fruity and officina! notes, excellent drinkability.

FOOD PAIRINGS

Tasty and spicy first courses such as soups or sauces and meat dishes like sliced beef or stewed rabbit, seasoned cheeses.
