Description
VINIFICATION
The grapes are harvested manually at full phenolic ripeness, selecting the best bunches directly in the vineyard from our best plot, where the vines have an
average age of 70 years. After destemming, the must macerates and ferments for about 20 days on the skins, during which time alcoholic fermentation is completed
and malolactic fermentation is carried out. This is followed by aging in new French oak barriques (100%) for 21 months, where the wine develops structure,
roundness, and aromatic depth. It is then transferred to steel for 3 months and concludes its journey with 3 months in the bottle, reaching the full expression of the
grape variety in a territorial and contemporary key.

ORGANOLEPTIC ASPECTS
Impenetrable ruby red with garnet reflections. The nose opens with an intense and deep range of ripe black fruits: prunes, blackberries, and cherries integrated with
balsamic notes, bitter cocoa, blond tobacco, and sweet spices (cloves, cinnamon). On the palate, it is velvety and voluminous, with enveloping tannins, well-balanced
acidity, and a very long, savory, and mineral finish with hints of leather.

FOOD PAIRINGS
Ideal with game birds, pheasant or duck with red fruit sauce, or a classic beef fillet. Also extraordinary with spicy dishes such as lamb with thyme or braised venison.
