The origin of the French name “pinot” comes from the word “pin”, which means “pine cone”. The shape of the bunch of Pinot Grigio recalls a small pine cone, as is the case for all the vines with the name “pinot”.

Description

VINIFICATION

Grapes are manually picked up and after a short cold maceration, are destemmed and carefully pressed.
The must is gently placed in stainless tanks to facilitate the fermentation at controlled temperatures. The wine is then refined for almost 6 months with noble yeasts and frequent battonages. After bottling, the wine rests for two months before being tasted.

ORGANOLEPTIC ASPECTS

lt is another great classic of the area, harvest followed by short cold maceration, then 6 months in steel vats on its own yeasts, with frequent battonage. Notes of white melon, rosemary, hints of jasmine and slight almondiness, on the palate iodine-salty, with a return of the officinaI notes and hints of white fruit. lt stilI closes with hints of toasted dried fruit.
