Description

VINIFICATION

We manually harvest the grapes which, once crushed and destemmed, placed in steel tanks. Here the must macerates and ferments on the skins for about 20 days, while carrying out malolactic fermentation. Racking involves aging part of the wine in French oak barrels. We bottle the wine usually in mid-December, and then give it an additional 2 to 3 months of bottle aging.

ORGANOLEPTIC ASPECTS

Intense ruby red color, plum reflections and a high density in the glass. The nose has fruity notes of yellow plum, then pepper leaf and balsamic nuances of eucalyptus. The palate is dense and compact, with evident tannins that blend with the fresh and acidic component. The finish is fruity, persistent.

FOOD PAIRINGS

Second courses of red meat with a delicate flavor such as braised meats, stews, but also Fiorentine and entrecote.

Suggested serving temperature 16-18°
