Description

VINIFICATION

The grapes are harvested manually at the end of September - beginning of October and are slightly dried. Then they are pressed, destemmed and placed in steel tanks where the must macerates and ferments on the skins for about 20 days, while carrying out malolactic fermentation.
Racking involves aging in French oak barrels for 36 months after which the assembly of the best barrels takes place in steel tanks for a period of about 3 months.
The wine is aged in bottle for a period of 24 months.

ORGANOLEPTIC ASPECTS

This wine has a ruby red color. The nose is intense, bold and aromatic, with a complex bouquet that can not be ignored. The typical aromas of berries, currants and plums meet cinnamon and pepper, licorice and clove. The taste is not less: warm and persuasive with a long and dry finish.

FOOD PAIRINGS

Ideal with red meat, game and mature cheeses. Also pleasant as an after-dinner wine.
