In the past, David faced the giant Goliath with nothing more than a sling and a stone. With humility and courage, David defeated the giant, proving that true strength lies in the soul rather than in mere physical power.
The name of this wine is inspired by that epic battle, immortalised in one of Caravaggio’s most celebrated paintings, where David is depicted holding a sword bearing an inscription. H-AS OS: “Humility killed pride.”

Description
VINIFICATION
The grapes are harvested manually when they reach full phenolic ripeness, selecting the best bunches. Vinification involves whole bunch maceration with stems for 60 days, during which extraction is managed exclusively by punching down, preserving elegance and velvety texture without forcing. After maceration, the wine is aged in new French oak barriques (first passage) for 24 months, where it develops depth, structure, and aromatic complexity. The process is completed with 6 months of bottle aging to achieve harmony and full integration between the varietal component, tannic texture, and wood notes.
ORGANOLEPTIC ASPECTS
In the glass, it has an intense, deep ruby red color with garnet reflections. The nose is broad and layered: ipe berries, sour cherry, and plum blend with the varietal signature of Schioppettino, made up of fine spices (black pepper, cloves), balsamic hints, and elegant notes of cocoa and tobacco that are perfectly integrated. On the palate, it is structured and enveloping, with a long and precise progression: the tannins are present but silky, supported by a freshness that lengthens the sip and a savory and persistent finish, with spicy and mineral returns.
FOOD PAIRINGS
Ideal with rich meats and slow-cooked dishes: braised meats, beef cheek, game (roe deer, venison) and lamb with herbs. It also pairs well with mushroom-based dishes, reductions or dark sauces, and mature and hard cheeses.
