Description

VINIFICATION

The grapes are harvested by hand and after a short cold maceration, they are destemmed and softly pressed. Once the purification is done, the must is gently placed in the tanks to facilitate the fermentation at controlled temperature. We affix the wine for about 6 months on noble yeasts making frequent battonage. After bottling the wine rests another two months before being tasted.

ORGANOLEPTIC ASPECTS

Straw yellow with greenish reflections; has a floral bouquet with balsamic notes and characteristic hints of bitter almond. The palate is dry, fresh, maintaining a full-bodied and savory structure.

FOOD PAIRINGS

Great for aperitifs, delicate cheeses, appetizers in general and pasta dishes with a delicate flavor.
